The three coffees have a 30 out of 100 selection process, meaning that out of 100 beans in excellent condition, perfectly selected, only 30 are chosen, achieving a much higher level of quality within the group of specialty coffees.

The Colombia and Castillo varieties are cultivated in the San Vicente district of Vélez, Santander , at 1820 meters above sea level . The Tabi variety is cultivated in the El Alto district of Pinchote, Santander, at 1700 meters above sea level.
